Impossible Brunch Pie

Ingredients
  

  • 10 oz pkg frozen chopped broccoli or chopped spinach
  • 8 oz pkg frozen asparagus spears cooked and drained
  • 1 cup Cottage Cheese
  • 1/2 cup Bisquick Baking Mix
  • 1 tomatoe peeled and thinly sliced
  • 1/4 cup Grated Parmesan Cheese

Instructions
 

  • Heat oven to 350°. Grease pie plate, 10”x 1 ½”.
  • Spread broccoli (or other vegetables) in plate.
  • Beat sour cream, cottage cheese, baking mix, butter and eggs until smooth, 15 seconds in blender on high.
  • Pour into plate. Top with tomatoes, sprinkle with Parmesan cheese.
  • Bake until knife inserted between center and edge comes out clean, about 30 minutes.

German Sausage Dinner

German Sausage Dinner

Ingredients
  

  • 3 lbs German Sausage uncooked, cut in pieces
  • 3 lbs small red potatoes cut in wedges
  • 1 lb Baby Carrots
  • 1 large red onion sliced and separated into rings
  • 2 4.5 oz jars whole mushrooms
  • 1/4 cup Butter cubed
  • 1 envelope onion soup mix
  • 2 tablespoons Soy Sauce
  • 1/2 teaspoon Pepper

Instructions
 

  • Cut German sausage into chunks. Place sausage, potatoes, carrots, onion, and mushrooms in a heavy duty foil bag. (17 x 15 in.)
  • Dot with butter. Sprinkle with soup mix, soy suace and pepper.
  • Seal tightly; turn to coat.
  • Grill covered over medium heat for 45-55 minutes or until vegetables are tender and sausage is no longer pink, turning once.

Notes

The original recipe called for Bratwurst. It tastes good too.

Five Cheese Macaroni

Five Cheese Macaroni

Ingredients
  

  • 1 tablespoon Vegetable Oil
  • 16 oz package elbow macaroni
  • 9 tablespoons Butter
  • 1/2 cup Muenster cheese shredded
  • 1/2 cup Cheddar cheese shredded
  • 1/2 cup Sharp Cheddar Cheese shredded
  • 1/2 cup Monterey Jack cheese shredded
  • 1 1/2 cups Half-And-Half
  • 8 oz Velveeta cheese cubbed
  • 2 Eggs beaten
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Ground Black Pepper

Instructions
 

  • Bring a large pot of lightly salted water to a boil. Add the oil and the pasta and cook for 8 to 10 minutes or until al dente; drain well and return to cooking pot.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In microwave, melt 8 tablespoons butter; stir into the macaroni.
  • In a large bowl, combine the Muenster cheese, mild and sharp Cheddar cheeses, and Monterey Jack cheese; mix well.
  • Add the half and half, 1 1/2 cups of cheese mixture, cubed velveeta, and eggs to macaroni; mix together and season with salt and pepper.
  • Transfer to a lightly greased deep 2 1/2 quart casserole dish.
  • Sprinkle with the remaining 1/2 cup of cheese mixture and 1 tablespoon of butter.
  • Bake in preheated oven for 35 minutes or until hot and bubbling around the edges; serve.

Deep Dish Pizza

Ingredients
  

  • 1 pkg Yeast
  • 1 cup Warm Water
  • 1 tbl Sugar
  • 1 tsp Salt
  • 2 tbl Oil
  • 2-3 cups Flour
  • 1 lb Italian Sausage
  • 1/4 cup Chopped Onion
  • 1 clove garlic
  • 1 lb Chopped Tomatoes
  • 6 oz can tomato paste
  • 1/2 lb Sliced Mushrooms
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1/8 tsp Pepper

Cheese Filling

  • 1 lb Ricotta Cheese
  • 1/4 lb Mozzarella Cheese
  • 2 Eggs
  • 1/4 cup Minced Parsley
  • 1/8 tsp Salt

Instructions
 

  • Dissolve yeast in warm water. Add sugar, salt and oil. Mix in enough flour to make soft dough, knead. Let raise.
  • Mix sausage, onion, garlic, tomatoes, tomato paste, mushrooms, oregano, salt, pepper, let cook and simmer for 30 minutes.
  • Roll out ½ of the dough to fit 9”x13” glass dish or 11”x17” jelly roll pan. Spread with cheese filling.
  • Top with other half of dough and the meat filling. Bake at 400° for 15 minutes.
  • Add topping of ½ lb. mozzarella, ½ tsp oregano, ¼ parmesan cheese and bake an additional 15 minutes.

  • 2 cups Chopped Chicken cooked
  • 2 cans cream of chicken soup
  • 2 1/4 cups Evaporated Milk
  • 1 can diced chilies
  • 12 corn tortillas
  • 1 pound Shredded Cheddar Cheese
  • 1 medium Onion

Instructions
 

  • Cut tortillas in quarters and spread half on bottom of greased 9”x13” pan.
  • Mix chicken, soup, chilies, onion, and milk until smooth. Pour half of mix over tortillas.
  • Top with remaining tortillas, and remaining soup mix.
  • Sprinkle with cheese, cover and bake at 350° for 30 minutes or until bubbly.

Ingredients
  

  • 2 cans asparagus drained
  • 4 chicken breast halves cooked and chopped
  • 2 cans cream of chicken soup
  • 3/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 cup shredded Cheddar cheese
  • 1 cup bread crumbs or cracker crumbs

Instructions
 

  • Layer asparagus in buttered 9 x 13 x 2-inch baking pan; top with cooked chicken.
  • Mix soup, mayonnaise, and lemon juice; pour over chicken and asparagus.
  • Top with cheese and bread crumbs.
  • Bake at 350° for 30 to 40 minutes.

Beef and Lima Bean Casserole

Ingredients
  

  • 10 oz frozen lima beans
  • 1 pound lean ground beef
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1 dash Nutmeg
  • 1 ea Egg slightly beaten
  • 2 tablespoons Vegetable Oil
  • 6 oz tomato paste small can
  • 1/4 teaspoon Paprika
  • 1 cup Sour Cream

Instructions
 

  • Cook lima beans according to package instructions; drain and set aside.
  • In a large bowl, combine ground beef, salt, pepper, nutmeg, and egg. Form meat mixture into 1 1/2-inch balls.
  • Brown meat balls in a skillet in vegetable oil.
  • Add tomato paste to the lima beans, then stir in paprika and sour cream.
  • Add browned meat balls and stir gently.
  • Pour mixture into a greased casserole and bake at 350° for 25 minutes.
