Instructions
  1. Preheat oven to 350 F.
  2. Sift together flour and baking powder in a bowl.
  3. Combine next 3 ingredients in a bowl and mix with an electric mixer on high speed until smooth. Make sure there are no lumps of brown sugar.
  4. Add dry ingredients and beat on low speed until just blended.
  5. Stir in granola and dried fruit. The batter will be very thick.
  6. Transfer batter to a lightly oiled baking dish and smooth the top.
  7. Bake 20-25 minutes, or until golden brown. This recipe serves 12.

  1. Preheat oven to 350 F. Lightly grease a 9 13 inch pan and set aside.
  2. Beat egg whites 30 seconds with an electric mixer.
  3. Add next 4 ingredients and beat 1 more minute.
  4. Stir in applesauce and fold apples into batter.
  5. Combine next 4 ingredients in a separate bowl and add to batter.
  6. Spoon mixture into prepared pan and bake 50-60 minutes or until center springs back when gently pressed. This recipe serves 16.

  1. Heat oven to 375˚.
  2. Put all ingredients except egg whites into mixing bowl. Mix 30 seconds on low. Increase speed to high and beat for 2 minutes.
  3. Add egg whites all at once and continue beating for 2 additional minutes.
  4. Pour into 9 inch greased/floured pans and bake 35-40 minutes.

Ingredients
Instructions
  1. Combine sugar, water and corn syrup in small saucepan. Cook over medium heat, stirring constantly until sugar is dissolved and mixture begins to boil.
  2. Boil without stirring until 242° or mixture will spin a thread.
  3. Just before syrup reaches temp, beat egg whites until stiff but not dry.
  4. Pour syrup in thin stream over egg whites while beating at high speed.
  5. Continue beating until mixture stands in stiff, glossy peaks.
  6. Beat in vanilla.
  7. Cool slightly, spread on sides and top of cake.
